Crispy Cheddar Chicken

One of the things I have loved most about being home again is cooking! It's great to have a real stove, good pans to cook with and not have to worry about the fire alarm going off and getting a $50 fine. 

Tonight I cooked one of my favorite meals for my family and I wanted to share it with you! This is Crispy Cheddar Chicken and it's similar to the Broccoli Cheddar Chicken that Cracker Barrel serves. It's super easy to make and tastes so good!

*Original Recipe has measurements for ingredients, I don't use them. It's a pretty simple recipe that you just use as much as you need. Except the sauce, measurements are good for that.*



Ingredients: 

Chicken:


Chicken Breasts

Ritz Crackers
Milk
Shredded Cheddar Cheese (about 4 cups)
Salt & Pepper
Dried Parsley

Sauce:


1 Can of Cream of Chicken Soup

2 Tbs of Sour Cream
2 Tbs of Butter

How To


1. Preheat the oven to 400 degrees and grab a 9x13 cooking pan.


2. Take two bowls, pour some milk in one and crush up some of the Ritz crackers in the other one. 


3. Cut each chicken breast into 3 sections. Dip each piece into the milk, then into the cracker crumbs. You may have to press the crumbs into it pretty good. Then place each piece into the pan.


4. Once you've done that, take the shredded cheese and pour it all over the chicken, completely covering it. Cover your pan with tin foil and put it in the oven for 35 minutes. After that 35 minutes, take the pan out and remove the tin foil and cook it for another 10 minutes or until the edges are golden brown. 


5. In a medium pot, combine the cream of chicken soup, butter, and sour cream and stir until hot. Serve over chicken.



That's it! Serve the chicken with mashed potatoes and broccoli like I did or whatever you like!
