Take Me to the Sea

I have this overwhelming desire to go to the beach. My whole life, I have loved the beach more than any other form of earth. The smell of the ocean, the feel of the sand between my toes, the cool breeze... that is what my heart desires. The feelings of peace and tranquility that flood me when I'm by the ocean is unlike anything else on this earth. I'm not sure its possible for me to be unhappy at the beach. I have yet to venture to the sea this summer... but I can't wait for the day that I do. To satisfy my cravings in the meantime... I look at pretty beach pictures. I realized that basically my whole Happy Heart board on pinterest is pictures of the beach. Here are some of my favorites:

Now, someone please take me to the sea :)

Homemade Crunchwrap Supreme

Please excuse the second post of the day... but hey, I made something that didn't involve chicken!

Now, I don't eat fast food very often but something I enjoy occasionally is the crunchwrap supreme from Taco Bell. Well... I found a recipe to make them at home! I hope you enjoy!

Original Recipe: Crunchwrap Recipe

Ingredients:

• Large Flour Tortillas (one for each person, plus an extra one to tear up)
• Tortilla Chips
• 1 Pound of Ground Beef
• 1 Packet of Taco Seasoning
• Sour Cream
• Shredded Mexican Blend Cheese
• Lettuce
• Tomatoes

Instructions:

1. Brown the beef in a frying pan, and add the taco seasoning.
2. Crunch up some tortilla chips and put them in a bowl.
3. Warm up the tortillas one at a time as you are ready to make the crunch wrap, otherwise it will cool and be too difficult to fold.
4. Lay out the tortilla, spread some sour cream in the middle of it and pile on the hamburger, lettuce, tomatoes, cheese, and crushed tortilla chips in whatever order you desire.
5. Fold the tortilla. Start at the bottom and fold into the center continuing around the whole thing until the filling is enclosed.
IMPORTANT NOTE: You may not be able to close the whole thing, if this is the case...  rip a piece off of another tortilla and place it on top of all your center toppings.
6. CAREFULLY (I burned myself a few times the last time I made these) place the tortilla in a warm frying pan seam side down. Press down with a spatula for a few minutes until golden brown. Flip the crunch wrap over and let the bottom side brown as well.

and that's it! throw that baby on a plate and enjoy! :)

Crescent Chicken

As you will soon learn from this blog... I cook a lot of chicken. I try to have as much variety as possible but frankly... I don't like touching raw beef and pork. It grosses me out. Chicken I can deal with. I know it doesn't make any sense...

Last night I made another chicken dish for my family for dinner and it was great! I love finding new things on Pinterest to try! This recipe was SUPER easy and tasted wonderful! The combination of buttery crescent rolls, cheddar cheese, and chicken was superb and it was delicious paired with mashed potatoes and green beans!

Note: The original recipe calls for less crescent rolls. I used 2 rolls for each because it was the only way to fully wrap it without all the chicken and the cheese falling out.

Original Recipe can be found here: Crescent Chicken Recipe

Ingredients:

2 cans of Crescent Rolls (8 in each)
3 Chicken Breasts, cooked and shredded
1 Cup of Shredded Cheddar Cheese (about)
1 Can of Cream of Chicken Soup
1 Can of Milk (using soup can)

Instructions:

*Preheat oven to 350*

1. Boil Chicken, Shred.
2. Make the soup with milk in a medium saucepan.
3. Lay out your crescent rolls, take shredded chicken and cheese and place in the middle of one roll and begin to wrap. Use second roll to enclose the filling and secure in place.
4. Place the wrapped chicken rolls in a 9x13 baking pan.
5. Pour the heated soup over the rolls and bake for 30 minutes at 350.
6. Serve with whatever you want for sides and enjoy!

I hope you enjoy this recipe! If you have any questions, please feel free to leave a comment below!

Friends

This summer so far, I've been watching the TV show, Friends. I don't know if you've ever seen it, but if you haven't... it's a show about 6 best friends living in New York City and their lives. Now, I should throw a disclaimer in here that while this show is absolutely hysterical and I've really loved getting into the characters and story line, I do not agree with everything the show portrays. Just putting that out there. Anyway...

A couple things have really struck me since I started watching the show. The first is how much I long for friendships like the ones portrayed on this sitcom. The 6 friends always have each others backs. They would do anything for each other, literally. They spend basically all their time together but rarely get sick of each other, and if they do they fix it. That's something that drives me crazy about today's relationships... if it's broken, we just throw it away instead of fix it. Now, I know it's a TV show and it's not totally realistic for life to be the same as what I've been seeing on my screen... I'm not getting totally lost in a separate universe here, but I do long for a group of friends who simply share life together the way that Joey, Monica, Chandler, Rachel, Ross and Phoebe do. I do have some core close friends too, I'm not a total loner. haha

Something else I've really picked up from the show is the lack of technology. The show was made in the 90's and early 2000's before cell phones and laptops were a huge thing. They have a landline in their apartment that they have to pay for every phone call. Chandler got a laptop in one episode but it's a total dinosaur. When they want something from each other... they meet up. When they want to hang out, they just do. When something happens and needs to be fixed, they talk about it in person instead of over Facebook or texting. They show their real emotions instead of using animated little faces that an iPhone provides you with. Now, don't get me wrong here... I am sometimes TERRIBLE at this. I have a miserable habit of always being on electronics... we all do. I want to encourage you today though to put away your electronics and have a real personable conversation with someone. If you have something you need to make right with someone, CALL them and ask them to meet you at Starbucks and talk about it face to face. We need to get back to having real life connections with people, rather than electronic ones.

Anyway, these are just a couple of the little things about life that I've picked up from watching Friends

Hope you are all having a beautiful day!

Lake Day

Today was so lovely. My best friend and I headed up to her family's lake house for the afternoon and did basically nothing. We sat on the dock for hours and just talked. My dear Julie is the definition of a true friend and I hope everyone has someone in their life like her. So excited for many more days like today with her this summer. Note for next time... embrace my pale skin and choose the sunscreen. ouch.

Me and Jules on our way to the lake with our Starbucks and blue skies!

The gorgeous view I had all day.
I hope the rest of you enjoyed the beautiful day today!

Fancy Fridays: Navy Edition

Hello Friends!

I was going to get dressed up myself for today's edition of Fancy Fridays but I ended up mowing my Nana's lawn and returning some of my family's soda cans today so needless to say, I ended up not feeling so fancy.

Instead I hope you enjoy this Navy edition. I love wearing the color navy... maybe it's just because of the fact that it's a good contrast with my blonde hair... but I always feel so elegant when I wear this color. Here's some favorites that I'm dying to find from pinterest :)

Simple, beautiful.

Mama's Birthday!

Today is my beautiful mother's birthday! My mom is one heck of a lady. She married my dad almost 24 years ago, had me almost 22 years ago and then my sister came along two years later. For the last 24 years of her life she has been loving our family unconditionally. She has given so much of herself for the three of us and has always been there for us. She's kind, loving, strong, wise, and brave. Words alone can't express how amazing she is.

Mama, I love you so much. Thank you for your selfless love and your continuous support. Like our song says, you are a hero in my eyes. I hope you've had a great day today.
